We grow GARLIC here at LoganBerry. Lots and lots of Garlic! Not just your grocery store variety, but Garlic with an attitude!
Our Garlic is grown in raised beds full of soft, rich, nutrient dense soil and covered with a 6 inch blanket of hay.
Garlic loves the cold winters but must be protected from freezing.
We plant a variety of Garlic cultivars, sometimes up to 24 different varieties, which brings comments from our customers thinking there was only one kind of Garlic. As they say, some like it hot! Others look for a milder taste.
There are 2 main categories of Garlic; Hardneck and Softneck.
The Hardneck send a stem or scape up in the Springtime that is left alone would flower and drop seeds that would eventually turn back into Garlic bulbs. We cut the scape off in the Spring to let the energies go back into the bulb rather that the flower. The scape has a mild Garlic flavor and can be used in cooking any dish that calls for onions or garlic. AND, that scape makes a mighty nice Pesto! Hardneck Garlics tend to have larger cloves but less “paper” covering that the Softneck variety.
Softnecks, as the name implies, remain pliable and are often seen braided. Their cloves are smaller, but larger in number, and have more “paper” wrapping to protect them making them a longer storing variety.
But, why do we grow Garlic? Well, we believe that eating well is important to our health. And, by eating well, we mean eating foods grown the old fashion way without the use of herbicides or pesticides as naturally and sustainably as possible. Garlic adds not only flavor to the food we eat, but gives us the extra bonus of being extremely good for us.
These health benefits are from a sulfur compound called Allicin that is activated when you chop or crush a Garlic clove. The Allicin is Garlic gives us 4 good reasons to eat Garlic every day…Garlic is antibacterial, anti-inflammatory, antiviral and antifungal.
Studies and tests have shown that eating garlic every day can reduce the effects of the common cold, reduce blood pressure, lower cholesterol, slow the aging process, detoxify heavy metals in your body, reduce chances of certain cancers and improve bone health.
To optimize Garlic’s health-promoting qualities, crush and mince Garlic and let sit for 5-10 minutes before cooking. (Use raw as much as possible, such as in dips, salsas, and salad dressings). A great health booster is a Garlic Shooter consisting of a clove of minced garlic, a squeeze of lemon juice and a bit of water.
Garlic is easily prepared by placing clove on chopping board and ‘smashing’ with flat side of knife to release clove skins. Peel, then mince or use Garlic Press.
Store Garlic bulbs in a cool, dry place. Do not refrigerate!
