COME TASTE LOGANBERRY IN CLARKESVILLE ON SAT. MAY 20

       Next Saturday May 20, LoganBerry is coming to Clarkesville at Erwin Rush from 10 – 5. We          are teaming up with Erwin Rush for the day. Look for our tents in front of the store. We’ll have lots of            goodies like Asparagus, Eggs, Garlic Scapes, Jams & Jellies and samples to taste.      

          COME TASTE LOGANBERRY!!   

 

          It will be a day of family fun with vendors, kid activities, a parade and lots to see and do. 

 

 

 

 

 

 

SPRINGTIME ON THE FARM

 

 

It’s been a while, but much has been going on at the Farm and we want to bring you up-to-date! Spring has been kind to us with just enough sunshine, rain and warm temperatures to bring out the Asparagus, Garlic Scapes and Strawberries and to make the hens happy and laying eggs once again.

Check out the many great recipes on our website (loganberryheritagefarm.com), but here are 3 of our all time favorites at this time of year. 

 

ASPARAGUS QUICHE                                                                                

Ingredients:

  • 1 TBSP Butter
  • 1 Leek (halved & thinly sliced)
  • Sea Salt
  • Ground Pepper
  • 1 lb. Asparagus (ends cut & sliced diagonally)
  • 4 large Eggs
  • 1 ¼ cups Half & Half
  • Ground Nutmeg
  • 1 cup shredded Gruyere cheese
  • 9” Pie Crust

Directions:

Preheat oven to 350 degrees, with rack in lowest position.

Melt Butter in large skillet.

Sauté Leek and Asparagus with Salt & Pepper until crisp-tender, 6-8 minutes.

Whisk Eggs in large bowl with Half & Half, ½ tsp Salt, 1 tsp Pepper and a pinch of Nutmeg.

Place Pie Crust on rimmed baking sheet. Sprinkle with Cheese, add Asparagus & Leeks, then pour Egg mixture on top.

Bake until center of quiche is set, about 50 to 60 minutes. Rotate sheet halfway through.

Let stand 15 minutes before serving.

 

Of course, Asparagus is delicious simply sauteed with olive oil, sea salt and garlic and what could be better than topping it off with Hollandaise Sauce. And for Mothers’ Day a delightful brunch of Eggs Benedict is called for!

 

Organic Rose’s Easy Hollandaise Sauce                                               

  • 3 LoganBerry Egg Yolks
  • 1 TBSP Lemon Juice
  • 1 stick Butter (not melted)

Stir Egg Yolks and Lemon Juice vigorously over medium low heat.

Add Butter and stir constantly until Butter is melted (Using the Butter stick to stir with works well)

Add and stir in:

2 drops Worcestershire Sauce

2 drops Hot Pepper Sauce

1/2 tsp White Wine

 

Garlic Scapes are a seasonal favorite. They are the stalk of the hardneck Garlics and have a mild garlic flavor that adds to any recipe calling for fresh garlic. Our favorite Springtime recipe for Garlic Scapes is PESTO!  It’s easy to make and we can’t get enough of it. (Garlic Scapes also freeze well for use later.)

LOGANBERRY GARLIC SCAPE PESTO                                    

Ingredients:

  • 20 Garlic Scapes about ½ lb, washed & trimmed
  • 2/3 cup finely grated Parmesan Cheese
  • 2/3 cup Walnuts, toasted
  • 1 cup Olive Oil
  • Sea Salt
  • Freshly ground Pepper

Directions:

Put all in food processor and blend well.  Keep in refrigerator. Use with veggies or crackers as a dip. Serve over grilled or baked fish and chicken. Use on a sandwich or pizza. Serve over your favorite pasta.
